Hello Mangala,
My 3 year old son is allergic to dairy and soy in addition to gluten. What would be a replacement for butter/margarine in this recipe. I would love to bake these cookies for my son. Please advise.
Thanks
Jennete
There is good news for you. I believe that there is new product coming out in May, made by “Earth Balance”. This is a soy free, dairy free ‘buttery’ spread. Whole Foods will market it starting sometime in May. I don’t know where you live, but i hope there is a Whole Foods near you. Alternately, I know that hydrogenated palm oil or coconut oil can be used, but i have not tried either of these myself. When my grandson had a mild level of dairy allergy, the Indian ‘ghee’ (clarified butter) worked for him, as ghee is devoid of milk solids and is pure fat. However, you must be cautious while trying this out. Do let me know if you can find the “Earth Balance” product –I am sure other readers will be interested. Please check all ingredients meticulously. This product contains pea protein, and if that is not an issue it, could work out well for your child. All the very best!
